In my opinion one of the weaknesses of the Atkins diet is not the poor consumption of vegetables but mainly, that it makes no distinction between saturated fats and refined polyunsaturated fats such as as canola oil, safflower oil, corn oil, soy oil and so on. Your cholesterol levels can increase for several reasons. Excess consumption of carbohydrates/sugars and alcohol can not only increase cholesterol level but also decrease the ability of the liver to process it. Lack of sleep, stress, aging, infections, chronic conditions, and intense physical activity all can increase cholesterol levels as well. Total cholesterol alone is not a good reference for cardiovascular disease risk, however. As a matter of fact, most of the people with myocardial infarction have low cholesterol. You can have low, normal or high cholesterol and still be at risk for heart disease. There are many other factors to consider in addition to total cholesterol. If properly managed, a diet high in animal fat, such as the Atkins or the latest LCHF, can normalize cholesterol levels and increase HDL as well. When following this type of nutritional program, quality food is imperative. I would not recommend this nutrition program if you are shopping in Publix or Whole Foods. Always check your liver before starting such a nutritional program. If the liver does not produce enough bile salt, you might have problem digesting fats.
